GIS Basics from ESRI.com
You'll find a simple explanation of GIS and what makes it so powerful, along with diagrams illustrating the relationship of data to maps. It will help clarify how this all goes together.

USGS (US Geological Survey)
The USGS is an incredible resource that is probably unappreciated by the majority of us. Once you start digging in the site, you'll find it hard to leave. They have a page set up that is a little more detailed that the GIS Basics from ESRI (start there if you are a beginner). The USGS outlines (1) what GIS is; (2) how GIS works; (3) what makes GIS special; and, (4) applications of GIS in the everyday world. They even have a link that discusses the use of GIS throughout history.
